Balsamic Bruschetta With Fresh Crab

NGREDIENTS:

  • 1 loaf french or garlic bread
  • 1 pound fresh blue crab meat 
  • 6 cherry tomatoes 
  • 1 clove garlic, minced fine
  • 1/2 Tsp citrus zest 
  • 1/4 Tsp basil leaves, chopped or fine
  • 3+ Tbsp garlic extra virgin olive oil or any EVOO
  • Balsamic vinegar to drizzle 
  • Fresh mint or parsley/cilantro 

We really enjoy the many things you can do with this dish. The different flavors of oils and vinegars is great to experiment with! This is a classic take on the bruschetta using fresh blue crab and topped with dark balsamic vinegar. 

PREPARATION:

Cut your bread into small slices as you would an appetizer size. Place your ingredients into a mixing bowl but do not add the crab. The way this particular version is made separates the other flavors leaving it as freshly tasting and as pure as possible. This will give you a full introduction to the many flavors in just this version. Bake the loaf following the instructions and then cut them into pieces and set them aside as we continue forward. 

Rinse your tomatoes and place them on a chopping block cutting them into small quarters. We will want to do the same with the mint to ensure the same tasting experience. You will mix the EVOO with these ingredients together with the others and move towards the next step. Get your serving dish ready and start by placing the bread evenly and close to each other. 

Place your crab first then layer your tomato mixture and then carefully add each remaining ingredient until you get to the vinegar. At this stage, we want to drizzle over everything then add the fresh mint/parsley/cilantro. The last stage for this is to place the cut basil over each piece evenly and make sure you prepare things proportionately and keep it more towards the outside of the piece. This will allow the lucky person to taste all of the flavors in each bite. Have fun with it and change it up to your liking but most of all, ENJOY IT!
